Harissa Falafels

Makes 12


SHARING - I’m all about the quick wins,


1tbs tomato paste

1 cup cooked quinoa

1 cup pumpkin seeds

1tsp ground cumin

1 tsp ground corriander

1 tin chickpeas

1 tbs rose harissa

Turn on oven to 180 degrees.


Place all ingredients into a blender.

Blend until the mixture sticks together and is combined, do not over blend as it will become mushy.

Using an ice-cream scoop or a large spoon scoop balls of the mixture and place on a greased baking sheet and tray.

Place in oven for 10 minutes then turn and cook for another 10 minutes or until golden, remove and enjoy!

'I usually make a batch of these every week as they are so handy to have in the fridge for a quick lunch or dipped in hummus as a yummy snack'
